
Hello! So while I'm not an Australia Day fan, it did remind me of a recipe I had been wanting to make for ages - lamingtons! And boy, these are good. This is another fabulous Taste.com recipe, and do note that it's best done overnight.
You'll need:
Cake
- 125g softened butter
- 2/3 cup caster sugar
- 2 eggs
- 1 cup self-raising flour
- 1/3 cup plain flour
- 1 teaspoon vanilla extract
- 1 cup milk
- 1 tablespoon lemon juice
Coating
- 2 cups icing sugar
- 1/3 cup cocoa powder
- 50g finely chopped butter
- 1/3 cup boiling water
Preheat the oven to 180 degrees Celsius, and grease and line a SQUARE (I just didn't have a square one) 19 cm x 19 cm (or equivalent rectangle) cake tin.
First, beat the sugar, eggs and vanilla together until light and fluffy. Add the lemon juice to the milk, and let it sit for a few minutes. In the meantime, beat in the eggs one at a time. Then sift in half of the flours, and add half the lemon milk, and stir to combine. Repeat with the rest of the flours and lemon milk. Spoon the mixture into the pan and pop it into the oven for 25-30 minutes, or until a skewer comes out clean.
Let the cake sit in the tin for 10 minutes, and then place on a rack, cover with a tea towel, and leave to cool overnight.
When the cake has been sitting for several hours or overnight, cut it into 3cm cubes. (You may want to check that it is fully cooked here, because mine was a little underdone and I popped the squares in the oven again to cook fully and they were fine).
Then mix together the cocoa powder, icing sugar, butter and boiling water until smooth. Set out the coconut in a separate bowl.
Using a fork, spear each of the cake cubes, and dip them in the chocolate, gently shaking off the excess.
Then roll them in the coconut, let the icing set for a while, and you're done! Easy peasy, and so delicious! Definitely one of Australia's better culinary ideas. ;)
