Caramel Slice

I don't think I need to say much - caramel slice pretty much speaks for itself. This is a Taste.com recipe.

You'll need:
Base
- 1 cup plain flour
- 1/2 cup brown sugar
- 2/3 cup dessicated coconut (original recipe says 1/2 cup, but I just looooooooooove coconut)
- 125 grams melted butter
Caramel
- 400g can condensed milk
- 2 tablespoons golden syrup
- 60 grams butter
Chocolate
- 125 grams chocolate (a mix of dark and milk is good)
- 60 grams copha

Base ingredients (Sorry, I made this in fits and starts - didn't get a photo of all the ingredients)

Preheat your oven to 180 degrees Celsius and line a 28 x 18 x 3 cm rectangle pan.

First, stick all the base ingredients together in a bowl and mix them up nicely.


Squish them into the pan and (with clean hands) press the base down nice and tight and evenly.


Bake the base for about 15 minutes, or until it's a lovely light golden colour. Then take it out of the oven and let it cool.


Melt the butter in a small pot and then add the rest of the caramel ingredients over a medium heat.


Stir for about 8 minutes, or until your caramel is smooth, golden and consistent:


When it reaches this point, pour it over the base, make sure it's smooth, and bake again for about 12 minutes.


Then bring it out of the oven, let it cool, and pop all of it in the fridge for 3-4 hours.



When the caramel is set, melt the chocolate and copha in a small pot.


When combined, pour over the top of the caramel, smooth and leave in the fridge to set. When it's set, cut up into small squares.
