Apologies for my ridiculously long absence! It's been a very busy term. But the holidays have arrived, and so I can bake and blog to my heart's content!
Shortbreads have gotta be an all-time favourite of mine. They're just so homey and warm and delicious. And plus, they're super easy to make. And way better than shop-bought shortbreads.
- 250g chopped butter
- 2 1/4 cups plain flour
- Slightly less than 1/2 cup caster sugar
- 3/4 cup custard powder
Chocolate to melt (optional)
Preheat the oven to 160 degrees Celsius.
First melt the butter gently in the microwave until it's about margarine consistency. (Using "Defrost" is probably safest to avoid melting it too much.)
Add the caster sugar to the butter and mix.
Sift the flour and custard powder into a bowl.
(I told you it was easy..)
And then combine the two mixtures gradually.
Roll the mixture into balls about 1 inch diameter...
...and then flatten with a fork.
Bake on a tray lined with baking paper for about half an hour, then cool. You're done! Unless you want to get creative and add some delicious choccy goodness...
In which case, you simply melt some chocolate and dip and drizzle to your heart's content! I rather like the cute look you get when you just dip the bottoms of the shortbreads into the chocolate (above and below).
