Aptly named - these are a whiz to make, and absolutely delicious. Plus, they're so festive and jolly - great for Christmas time, just around the corner! These are a slight variation on Rum Balls, and originally from the Commonsense Cookery Book.
It's good to have the time to blog again after what's been a hectic final term at school. :)
- 250g (one packet) of Milk Arrowroot biscuits or similar.
- 1 tablespoon cocoa
- 1 can of condensed milk
- 1-2 tablespoons of Kahlua, Bailey's or similar.
- 1 cup of coconut to go into the mixture
- 1/4 cup of coconut for coating
No cooking required!
Start off by breaking the biscuits into your food processor/blender as below, and then process until they look like...
This! It's perfectly fine (recommended, even) to have some larger chunks (which will probably be at the bottom of the food processor) as they add a lovely crunch. :)
The rest is easy as pie. Mix all of the ingredients together (EXCEPT the coconut for coating) until they reach a fairly 'together' and sticky consistency and look like the picture below.
Roll a heaped teaspoon or so's worth into a ball, then coat with the coconut. It might take a few goes to get the size right, but I find that an inch diameter is usually best size.
Then simply stick them in the fridge for a while, put them into a lovely festive bowl and share! These are great for Christmas parties, picnics etc. Alternatively, you could just hoard them all for yourself, which I totally approve of as well. ;) Enjoy, my lovelies!
