As you may know, I've recently made the change to a cruelty-free diet (to find out what that wanky term even means, check out my post about it here). This means that I've moved away as much as possible from anything containing dairy or eggs. I've easily left dairy milk, cheese and butter behind - there are endless alternatives that leave nothing to be desired. However, one food that caused me to pause in my tracks was ice cream. The most easily accessed brand of dairy-free ice cream in the shops is $7.10/kg. Now I don't know about you, but that thought makes me feel a little ill, given the amount of ice cream I eat (read: it's a lot.). Surely there has to be a cheaper, better option?!
Fear not, because get this: Not only is there an option that is vastly cheaper than any store-bought dairy-free ice cream, it's actually fantastically healthy for you. "How, Sophie?! How could this be? Surely I'm dreaming?!"
Well, my dear reader, one word for you: Bananas.
Banana ice cream is easy to make, inexpensive, delicious, and full of all those nutrients that bananas offer like the generous, scrumptious darlings they are. You don't even need an ice-cream maker. Sold yet? Let's get down to making some then. This is my basic recipe for vanilla ice cream, but as time goes on and I experiment more, I'll keep adding flavours to this post. A great thing with ice cream is that you can add any additions you like!
You'll need:
- 3 Bananas (I use 3 bananas for my recipe, just because that's the number that happens to fit in the container I use to freeze them. It makes about 3 solid serves. There's nothing stopping you making monster batches though, especially if bananas are on sale!)
- 3 teaspoons of vanilla extract
- 2 tablespoons maple syrup
- A food processor is also ideal, although I'm sure you could also use a blender.
First, chop up your bananas into coins and pop them in a container to freeze for at least 12 hours.
When sufficiently frozen, whack them into your food processor and blend them for a while. If you're worried because it looks like this:
Worry not, all is well. Keep blending, and it will start to smooth out (good idea to scrape the sides of the processor down every now and then).
Eventually, you'll have what looks like soft-serve ice cream. Because it is soft-serve ice cream. Now is the time to add your flavourings (ie the vanilla and maple syrup). Simply blend until combined, then pop the soft serve back in the container and freeze until solid again. Boom, you have your very own, very healthy, very delicious, very kind ice cream! Told you being vegan was easy. ;)
